- In a large skillet over medium heat, add the chopped onions and minced garlic. Sauté for about 2–3 minutes, or until the onions are translucent and fragrant.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until it’s browned and no longer pink—around 5 minutes.
- Stir in the diced potatoes and cook for another 5 minutes, allowing them to soften slightly.
- Lower the heat and add the diced green chiles, beef broth, cumin, salt, and pepper. Stir to combine.
- Cover the skillet and let it simmer on low heat for about 15–20 minutes, or until the potatoes are cooked through and tender.
- Once finished, remove from heat, garnish with fresh cilantro, and serve warm!
Notes
Substitutions: You can swap out ground beef for ground turkey or chicken. Ensure your potatoes are uniformly diced for even cooking. Don’t skip the cumin for depth of flavor.
