  • 4 pieces salmon fillets (about 6 ounces each) Fresh salmon is preferred.
  • 3 tablespoons olive oil Extra virgin olive oil is ideal.
  • 2 cloves garlic, minced Fresh garlic enhances the flavors.
  • 1 whole Juice of 1 lemon Use fresh lemon juice for the best taste.
  • 2 teaspoons dried oregano Can be replaced with fresh oregano if available.
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese For garnish.
  • Fresh parsley for garnish Chopped for best presentation.
  • Lemon wedges for serving Adds an extra burst of flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper until well combined.
  3. Place salmon fillets in a baking dish. Pour the marinade over the top, ensuring each piece is well coated. Allow to marinate for 15 minutes if time allows; it enhances the flavors!
Cooking
  1. Bake in the preheated oven for about 15-20 minutes or until the salmon flakes easily with a fork.
  2. Once done, remove from the oven, sprinkle with crumbled feta cheese and fresh parsley. Serve alongside lemon wedges for an extra burst of flavor!

Notes

For best results, use fresh ingredients and aim for a slightly undercooked center for a melt-in-your-mouth texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
