  • 1 cup gluten-free flour blend
  • 2 large eggs
  • 1/2 cup milk (or dairy-free milk)
  • 2 tablespoons sugar (coconut sugar is a healthier option)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your waffle iron according to the manufacturer’s instructions and lightly grease the plates with cooking spray or oil.
  2. In a large mixing bowl, whisk together the gluten-free flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix the mashed sweet potatoes, eggs, milk, sugar, and vanilla extract until well combined, ensuring there are no lumps.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. It’s fine if there are a few lumps.
  5. Pour the batter into the preheated waffle iron, following your machine’s instructions. Cook until the waffles are golden brown and crispy, usually about 4-6 minutes.
  6. Carefully remove the waffles and serve them warm with your favorite toppings.

Notes

For substitutions, you can use mashed pumpkin or butternut squash. Customize with chopped nuts or chocolate chips for added texture. Store leftovers in an airtight container; refrigerate for up to 3 days or freeze for up to 2 months.
