Ingredients
  

Dry Ingredients
  • 2 cups gluten-free all-purpose flour blend (ensure it contains xanthan gum) Use a high-quality flour blend.
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar (or any sweetener of choice)
Wet Ingredients
  • 1 cup almond milk (or any non-dairy milk)
  • 1/4 cup vegetable oil (coconut oil works too!)
  • 1 tablespoon apple cider vinegar Essential for achieving a light crumb.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it.
  2. In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and sugar until well blended.
  3. In a separate bowl, combine the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and stir until just combined. Don’t overmix!
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Place the loaf in the oven and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!

Notes

Wrap tightly in plastic wrap or store in an airtight container. Fresh for 3 days at room temperature, up to a week in the fridge, or freeze slices for up to three months.
