Preparation
- Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it.
- In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and sugar until well blended.
- In a separate bowl, combine the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
- Pour the wet mixture into the dry mixture and stir until just combined. Don’t overmix!
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Place the loaf in the oven and bake for 30-40 minutes, or until a toothpick inserted in the center comes out clean and the top is golden.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
Notes
Wrap tightly in plastic wrap or store in an airtight container. Fresh for 3 days at room temperature, up to a week in the fridge, or freeze slices for up to three months.
