Preparation
- Start by slicing your onions thinly, so they caramelize evenly. Measure out your pasta and beef broth in advance, so you’re ready to go.
Cooking
- In a large pot or deep skillet, heat the olive oil and butter over medium heat. Add your sliced onions and season lightly with salt. Cook, stirring occasionally, for about 15-20 minutes until they are deeply caramelized and golden brown.
- Once the onions are golden and fragrant, pour in the beef broth and add the thyme. Bring to a gentle simmer.
- While the broth simmers, cook your pasta according to the package instructions until al dente. Drain and set aside, reserving a bit of pasta liquid in case you need to adjust the sauce later.
- Add the drained pasta to the pot with the onion and broth mixture. Toss everything together, adjusting the consistency with reserved pasta water if necessary.
- Sprinkle the grated Gruyère cheese on top and let it melt into the pasta, stirring to combine.
- Divide into bowls, garnish with additional cheese and parsley if desired, and enjoy immediately.
Notes
If Gruyère isn’t available, any good melting cheese will work. Use vegetable broth for a vegetarian version to maintain savoriness. For leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat gently on low heat, adding a splash of water or broth to restore creaminess.
