Preparation
  1. Preheat your oven to 350°F (175°C). Grease a cake pan with a bit of butter or non-stick spray.
  2. Peel, core, and slice the apples evenly to ensure they cook uniformly.
  3. In a large mixing bowl, whisk together the eggs and sugar until light and fluffy. Gradually stir in the melted butter and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Slowly add this mixture to the egg mixture, stirring gently until just combined.
  5. Carefully fold the apple slices into the batter, making sure they are evenly distributed.
  6. Pour the batter into the prepared cake pan and smooth the top. Bake in the oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack. Serve warm or at room temperature.
