  1. Start by thoroughly washing the cucumber under cold water. Pat it dry with a clean kitchen towel.
  2. Carefully cut the cucumber into even slices, about 1/2 inch thick for a uniform presentation.
  3. In a mixing bowl, combine the feta cheese, olive oil, lemon juice, salt, and pepper. Mash with a fork to create a creamy mixture.
  4. Take each cucumber slice and dollop a generous spoonful of the feta mixture on top.
  5. Finely chop fresh herbs and sprinkle them over the assembled bites for added charm.

Notes

Serve immediately to avoid sogginess. Store leftover feta mixture in the fridge for up to 2 days but keep cucumber slices separate until ready to serve.
