  • 1 pound chicken breast, cut into cubes Ensure the chicken is Halal-compliant.
  • 1/2 cup dill pickle juice
  • 1 packet ranch seasoning mix Substitution: can make your own with dried herbs.
  • as needed Skewers (wooden or metal) Soak wooden skewers in water before using.
  • as needed Dill pickles (for garnish, optional)

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine the chicken cubes, dill pickle juice, and ranch seasoning mix.
  2. Allow the chicken to marinate in the refrigerator for at least 15 minutes.
Prepare the Skewers
  1. While the chicken is marinating, soak wooden skewers in water for about ten minutes to prevent burning (if using metal skewers, skip this step).
Assemble the Skewers
  1. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
Cook the Skewers
  1. Preheat your grill or grill pan over medium-high heat.
  2. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
  1. Remove the skewers from the grill and let them rest for a few moments. Garnish with dill pickles if desired, and serve warm.

Notes

For maximum flavor, marinate the chicken for up to 2 hours. Ensure the grill is hot to prevent sticking and achieve a beautiful sear. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to a month.
