Ingredients

Vegetables
  • 2 medium cucumbers, sliced thinly
  • 2 large carrots, peeled and julienned or grated
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons vinegar (white wine, apple cider, or rice vinegar)
  • Salt and pepper to taste

Method

Preparation
  1. Wash the cucumbers thoroughly and slice them thinly. A mandolin slicer works well for this.
  2. Peel the carrots and either grate them or slice them into thin matchsticks.
Combine Ingredients
  1. In a large mixing bowl, combine the sliced cucumbers and julienned carrots. Gently toss to ensure they are evenly mixed.
Create the Dressing
  1. In a small bowl, whisk together the olive oil, vinegar, salt, and pepper until well combined.
Dress the Salad
  1. Pour the dressing over the cucumber and carrot mixture and toss gently until everything is well-coated.
Let It Rest
  1. Let the salad sit for about 5-10 minutes before serving to allow the veggies to soak in the dressing.
Serve and Enjoy
  1. Transfer the salad to a serving bowl and enjoy fresh. It can hold up for a couple of days in the fridge.

Notes

Substitutions for cucumbers include bell peppers or zucchini. Avoid over-salting, and prep veggies beforehand for potlucks.
