Ingredients
  

Main Ingredients
  • 1 lb chicken breasts (boneless and skinless)
  • 1 whole bell pepper (sliced; any color)
  • 1 whole onion (sliced)
  • 1 packet fajita seasoning (Halal-friendly)
  • 1 can diced tomatoes with green chilies (drained)
  • to taste tortillas (for serving)

  • to taste sour cream Halal
  • to taste avocado Halal
  • to taste cheese Halal

Method
 

Preparation
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the sliced bell pepper and onion over the chicken.
  3. Sprinkle the fajita seasoning over the top and pour the drained can of diced tomatoes with green chilies over everything.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked and tender.
  5. Once done, shred the chicken with two forks and stir everything together in the crockpot.
  6. Serve the chicken and veggies in warm tortillas with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or on the stove over medium heat.
