Preparation
- Place the chicken breasts in the bottom of the crockpot.
- Add the sliced bell pepper and onion over the chicken.
- Sprinkle the fajita seasoning over the top and pour the drained can of diced tomatoes with green chilies over everything.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours until the chicken is fully cooked and tender.
- Once done, shred the chicken with two forks and stir everything together in the crockpot.
- Serve the chicken and veggies in warm tortillas with your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. Reheat in the microwave or on the stove over medium heat.
