Method
 

Preparation
  1. In a large pot, boil salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until golden brown, roughly 5-7 minutes. Remove the chicken and set aside.
  3. In the same skillet, add the diced onion and garlic. Cook for about 2-3 minutes until fragrant and the onion is translucent.
  4. Pour in the chicken broth and bring to a simmer. Stir in the Cajun seasoning followed by the heavy cream. Let it simmer gently for about 5 minutes to thicken.
  5. Add the cooked chicken back into the skillet along with the pasta. Toss everything together until well coated in the creamy sauce.

Notes

You can swap out chicken breast for shrimp or turkey for a different protein option. Prep the chicken and chop the vegetables ahead of time for quicker cooking.
