Preparation
- In a large pot, boil salted water and cook the penne pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and pepper, and cook until golden brown, roughly 5-7 minutes. Remove the chicken and set aside.
- In the same skillet, add the diced onion and garlic. Cook for about 2-3 minutes until fragrant and the onion is translucent.
- Pour in the chicken broth and bring to a simmer. Stir in the Cajun seasoning followed by the heavy cream. Let it simmer gently for about 5 minutes to thicken.
- Add the cooked chicken back into the skillet along with the pasta. Toss everything together until well coated in the creamy sauce.
- Plate your Easy Creamy Cajun Chicken Pasta and garnish with freshly chopped parsley. Enjoy!
Notes
You can swap out chicken breast for shrimp or turkey for a different protein option. Prep the chicken and chop the vegetables ahead of time for quicker cooking. Avoid overcooking the pasta; it should have a slight bite to it. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
