- In a large bowl, combine the cottage cheese, flour, salt, baking powder, egg, and olive oil. Stir until you have a sticky dough.
- Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth.
- Divide the dough into 4 equal pieces. Roll each piece out into flat rounds about 1/4-inch thick.
Cooking
- Preheat a skillet over medium heat and add a splash of olive oil.
- Place one flatbread in the skillet, cooking for about 3-4 minutes on each side until golden brown. Repeat with remaining pieces.
- Remove from the heat and keep warm. Brush lightly with olive oil and sprinkle with herbs for extra flavor.
Notes
For substitutions, ricotta can be used instead of cottage cheese. Make sure your skillet is really hot before cooking for a crispy exterior. If the dough is too sticky, add a bit more flour, but keep it moist for the best texture. Store in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
