Ingredients
  

For the Flatbread
  • 1 cup cottage cheese Rich in protein and adds creaminess
  • 1 cup all-purpose flour
  • 1 large egg For binding the ingredients
  • 1 teaspoon baking powder Helps the flatbreads puff up
  • ½ teaspoon salt Enhances flavor
  • 1 tablespoon olive oil Used for cooking the flatbreads

Method
 

Preparation
  1. In a large mixing bowl, combine 1 cup of cottage cheese, 1 cup of all-purpose flour, 1 large egg, 1 teaspoon of baking powder, and ½ teaspoon of salt. Stir until a soft dough forms.
  2. Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth. If it is sticky, add a pinch more flour.
  3. Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it into a disc about ¼ inch thick.
Cooking
  1. Heat 1 tablespoon of olive oil in a frying pan over medium heat.
  2. Cook each flatbread for about 2-3 minutes on each side, or until they’re golden brown and puffed up.
Serving
  1. Remove the flatbreads from the pan and let them cool slightly. Enjoy them warm with your favorite toppings, or as a side with any meal.

Notes

Store uneaten flatbreads in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or toaster. Can be frozen for up to a month.
