Preparation
- In a large mixing bowl, combine 1 cup of cottage cheese, 1 cup of all-purpose flour, 1 large egg, 1 teaspoon of baking powder, and ½ teaspoon of salt. Stir until a soft dough forms.
- Lightly flour a clean surface and knead the dough for about 2-3 minutes until smooth. If it is sticky, add a pinch more flour.
- Divide the dough into 4 equal portions. Roll each portion into a ball, then flatten it into a disc about ¼ inch thick.
Cooking
- Heat 1 tablespoon of olive oil in a frying pan over medium heat.
- Cook each flatbread for about 2-3 minutes on each side, or until they’re golden brown and puffed up.
Serving
- Remove the flatbreads from the pan and let them cool slightly. Enjoy them warm with your favorite toppings, or as a side with any meal.
Notes
Store uneaten flatbreads in an airtight container in the refrigerator for up to 3 days. Reheat in a pan or toaster. Can be frozen for up to a month.
