Preparation
- Preheat your oven to 375°F (190°C).
- Lightly brush both sides of each tortilla with olive oil (if using) and set aside.
- In a large mixing bowl, combine the cottage cheese, eggs, chopped spinach, shredded cheese, salt, and pepper. Stir until evenly mixed.
- Layer the tortillas on the bottom of a baking dish. Pour the cottage cheese mixture over the tortillas, spreading it evenly.
Baking
- Bake in the preheated oven for about 30 minutes, or until the eggs are set and the top is golden brown.
Serving
- Allow to cool for a few minutes before slicing into squares and serving warm.
