  • 4 large eggs
  • 2 cups fresh spinach (chopped)
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 4 medium-sized tortillas
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly brush both sides of each tortilla with olive oil (if using) and set aside.
  3. In a large mixing bowl, combine the cottage cheese, eggs, chopped spinach, shredded cheese, salt, and pepper. Stir until evenly mixed.
  4. Layer the tortillas on the bottom of a baking dish. Pour the cottage cheese mixture over the tortillas, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 30 minutes, or until the eggs are set and the top is golden brown.
Serving
  1. Allow to cool for a few minutes before slicing into squares and serving warm.

For variations, substitute spinach with other vegetables like bell peppers or zucchini. Ensure eggs are well beaten for fluffiness and avoid overbaking.
