  • 6 slices slices of bread Use whole grain or gluten-free bread if desired.
  • 3 large eggs
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar Divided into two parts for the filling and topping.
  • 1 teaspoon cinnamon Divided into two parts for the filling and topping.
  • 2 tablespoons butter For cooking.
  • to taste Maple syrup For serving.

Method
 

Preparation
  1. Start by taking your slices of bread and flattening them slightly with a rolling pin.
  2. In a bowl, mix together 1 tablespoon of sugar and 1/2 teaspoon of cinnamon. Spread this mixture over each slice of flattened bread.
  3. Place your filling of choice (cream cheese, Nutella, or peanut butter) at one end of the bread and roll it up tightly.
Cooking
  1. In another bowl, whisk together 3 large eggs, 1/4 cup of milk, and 1 teaspoon of vanilla extract until well combined.
  2. Dip each rolled-up bread piece into the egg mixture, ensuring that all sides are covered but not overly soaked.
  3. In a skillet over medium heat, melt 2 tablespoons of butter. Place the roll-ups seam-side down and cook until golden brown on all sides, about 2-3 minutes per side.
  4. In a small bowl, mix the remaining sugar and cinnamon, then sprinkle this mixture over the warm roll-ups before serving.

Notes

If you have leftovers, let them cool before storing in an airtight container for up to 3 days. To reheat, use a toaster oven or microwave.
