Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir in the melted butter, sugar, egg, and vanilla extract until well combined.
- In another bowl, mix the flour, baking soda, salt, and ground cinnamon.
- Gradually mix the dry ingredients into the wet banana mixture until just combined.
- In a small bowl, combine the brown sugar and 1 teaspoon ground cinnamon.
- Pour half the batter into the prepared loaf pan. Sprinkle half the cinnamon sugar mix over the batter, then add the remaining batter and top with the remaining cinnamon sugar mix. Swirl the mixture together for a marbled effect.
- Bake for 55-65 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For best flavor, use ripe bananas with brown spots. Wrap leftover bread tightly in plastic wrap or foil and store at room temperature for 3-4 days or freeze for up to 3 months.
