- In a mixing bowl, combine the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir well to ensure that everything is evenly mixed.
- Pour in the milk and honey (or maple syrup). Add vanilla extract if using. Stir until fully combined—you want the oats and chia seeds to be soaked evenly.
- Cover the bowl or transfer the mixture into a mason jar, then refrigerate overnight (or for at least 4-5 hours) to let the oats soften and the chia seeds bloom.
- In the morning, give your oats a good stir. Then add your favorite toppings—fresh fruits, a sprinkle of nuts, or extra cinnamon—before enjoying!
