Preparation
- Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk until well combined.
- In another bowl, whisk together the wet ingredients: milk, melted butter, egg, and vanilla extract.
- Pour the wet mixture into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
Baking
- Bake in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- While the muffins are baking, mix the sugar and ground cinnamon for the coating in a shallow bowl.
- Once out of the oven, let the muffins cool for about 5 minutes. Then, while they are still warm, roll them in the cinnamon sugar mixture until well-coated.

Notes
These muffins stay fresh for about 3-4 days when stored in an airtight container at room temperature. They can be frozen for up to three months. To reheat, microwave for about 15-20 seconds or warm in the oven for a few minutes.
