Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder Ensure it's fresh for the best rise.
  • 1/4 teaspoon baking soda Ensure it's fresh for the best rise.
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
Wet Ingredients
  • 1/2 cup milk Can substitute with dairy-free milk.
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Coating
  • 1/4 cup granulated sugar For coating.
  • 1 teaspoon ground cinnamon For coating.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, salt, and ground cinnamon. Whisk until well combined.
  3. In another bowl, whisk together the wet ingredients: milk, melted butter, egg, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and gently mix until just combined. Be careful not to overmix; a few lumps are okay.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake in the preheated oven for about 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. While the muffins are baking, mix the sugar and ground cinnamon for the coating in a shallow bowl.
  3. Once out of the oven, let the muffins cool for about 5 minutes. Then, while they are still warm, roll them in the cinnamon sugar mixture until well-coated.
  4. Place on a wire rack to cool completely, and enjoy your delicious Easy Cinnamon Donut Muffins!

Notes

These muffins stay fresh for about 3-4 days when stored in an airtight container at room temperature. They can be frozen for up to three months. To reheat, microwave for about 15-20 seconds or warm in the oven for a few minutes.
