  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
Wet Ingredients
  • 0.5 cups unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups milk
Chocolate and Optional Add-ins
  • 1 cup semi-sweet chocolate chips
  • 0.25 cups chopped nuts Optional for added crunch

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C).
  2. Line your muffin tin with paper liners or lightly grease it.
Mix Ingredients
  1. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, mix melted butter, eggs, vanilla extract, and milk until well combined.
  3. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  4. Fold in the chocolate chips and nuts if using.
Baking
  1. Scoop the batter into the muffin cups, filling each about ¾ full.
  2. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
Cooling
  1. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
  2. Enjoy warm or at room temperature.

Notes

For healthier options, substitute whole wheat flour for all-purpose flour and add yogurt for extra moisture. Avoid overmixing to keep muffins light. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
