  • 2 pieces boneless, skinless chicken breasts, diced Fresh chicken is recommended for best flavor.
  • 2 medium zucchinis, sliced into half-moons Choose firm zucchinis.
  • 1 piece bell pepper, sliced Any color bell pepper can be used.
  • 3 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 tablespoon olive oil For sautéing the chicken.
  • 3 tablespoons soy sauce Use low sodium, if preferred.
  • 1 tablespoon sesame oil For additional flavor.
  • Salt and pepper, to taste
  • Sesame seeds, for garnish (optional) Adds a nice crunch.

Preparation
  1. Dice the chicken and slice the zucchini and bell pepper. Mince the garlic.
Cooking
  1. In a large skillet or wok, heat the olive oil over medium-high heat.
  2. Add the diced chicken to the skillet and season with salt and pepper. Stir-fry until the chicken is golden brown and cooked through, about 5-7 minutes.
  3. Toss in the zucchini and bell pepper, along with the minced garlic. Stir-fry for an additional 3-4 minutes until vegetables are tender but still crisp.
  4. Pour in the soy sauce and sesame oil, stirring well to coat everything evenly. Cook for another minute to combine flavors.
  5. Garnish with sesame seeds if desired, and serve hot over rice or noodles.

Notes

You can customize the vegetables based on what you have on hand. Avoid overcrowding the pan for a better stir-fry.
