  • 2 medium zucchini, sliced
  • 2 cups cooked chicken, shredded or diced
  • 1 cup mozzarella cheese, shredded
  • 1 cup marinara sauce or your favorite pasta sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • Olive oil for greasing the baking dish
  • Fresh basil or parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9x13-inch baking dish with olive oil.
  3. Layer sliced zucchini at the bottom of the prepared dish.
  4. Add half of the shredded chicken on top and sprinkle with salt, pepper, garlic powder, and Italian seasoning.
  5. Spoon half of the marinara sauce over the chicken and sprinkle half of the mozzarella cheese on top.
  6. Repeat layering with the remaining zucchini, chicken, sauce, and finish with mozzarella cheese.
  7. Cover with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  9. Let it cool for a few minutes, then garnish with fresh basil or parsley if desired.

Notes

For ingredient alternatives, swap chicken for turkey or try a vegetarian option like beans. Grate zucchini for a different texture, and check on cooking time if you prefer a crispier top.
