Preparation
- Preheat your oven to 375°F (190°C).
- Lightly grease a 9x13-inch baking dish with olive oil.
- Layer sliced zucchini at the bottom of the prepared dish.
- Add half of the shredded chicken on top and sprinkle with salt, pepper, garlic powder, and Italian seasoning.
- Spoon half of the marinara sauce over the chicken and sprinkle half of the mozzarella cheese on top.
- Repeat layering with the remaining zucchini, chicken, sauce, and finish with mozzarella cheese.
- Cover with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes, then garnish with fresh basil or parsley if desired.
