  • 2 cups mixed vegetables (broccoli, bell peppers, carrots, snap peas) Feel free to swap in your favorite vegetables
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Preparation
  1. Start by cutting the chicken breast into strips and prepping your mixed vegetables. Gather all your ingredients close by to streamline your cooking process.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Ensure the oil gets hot enough to create that perfect sear on the chicken.
  2. Add the chicken strips to the skillet. Sear for about 5-7 minutes, stirring occasionally until the chicken is browned and cooked through. Season with salt and pepper to taste.
  3. Toss in the minced garlic and ginger. Stir for an additional minute, allowing those incredible fragrant notes to fill the air.
  4. Add the mixed vegetables to the skillet. Stir-fry for another 3-5 minutes until the vegetables are tender yet still crisp.
  5. Pour in the soy sauce and mix everything well. Cook for an additional minute to let all the flavors meld together.

Notes

For a Halal-friendly twist, use beef or shrimp instead of chicken. Pay attention to your veggies; they should be vibrant and slightly crisp. Avoid overcrowding the pan for a better sear.
