Cooking the Chicken
- In a large skillet, heat the olive oil over medium heat. Add the ground chicken and use a spatula to break it apart. Cook for about 5-7 minutes until the chicken is browned and cooked through.
- Once the chicken is cooked, sprinkle in the taco seasoning. Stir to combine, and add a splash of water if needed. Allow it to simmer for about 2-3 minutes until the seasoning is well integrated.
Preparing the Tortillas
- In a different pan, warm your tortillas slightly over low heat. You want them soft and pliable — not crispy!
Assembling the Tacos
- Take a warm tortilla, add a generous scoop of the seasoned chicken, followed by shredded lettuce, diced tomatoes, and cheese.
- Top it off with a dollop of sour cream and a spoonful of salsa if desired.
- Fold your taco in half, take a bite, and enjoy the explosion of flavors!
Notes
If ground chicken isn’t your thing, feel free to substitute with ground turkey or lentils for a vegetarian option. Store cooked chicken in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F for 20 minutes or microwave for 1-2 minutes.
