- Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain, but reserve about a cup of pasta water for later.
- In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the bite-sized pieces of chicken. Season with salt and pepper. Sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 1 minute, or until fragrant—be careful not to burn it!
- Add the drained pasta to the skillet with the garlic, then return the chicken to the pan. Pour in a splash of the reserved pasta water to help combine the sauce.
- Slowly add in the grated Parmesan cheese, stirring until everything is well coated and creamy. If it’s too thick, add a little more pasta water to reach your desired consistency. Adjust seasoning with more salt and pepper if needed.
