  • 8 oz pasta (any variety such as penne or fettuccine)
  • 2 pieces chicken breasts, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation
  1. Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain, but reserve about a cup of pasta water for later.
  2. In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the bite-sized pieces of chicken. Season with salt and pepper. Sauté until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute, or until fragrant—be careful not to burn it!
  4. Add the drained pasta to the skillet with the garlic, then return the chicken to the pan. Pour in a splash of the reserved pasta water to help combine the sauce.
  5. Slowly add in the grated Parmesan cheese, stirring until everything is well coated and creamy. If it’s too thick, add a little more pasta water to reach your desired consistency. Adjust seasoning with more salt and pepper if needed.
