  • 2 cups cooked chicken, shredded (ensure it’s halal)
  • 1 cup rice, cooked (white or brown)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup salsa (check for halal compliance)
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning (check ingredients)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, black beans, salsa, taco seasoning, olive oil, and half of the cheddar cheese. Stir until well combined.
  3. Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
  4. Top with the remaining cheddar cheese to create a golden, cheesy crown.
Cooking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbling.
  2. Remove from the oven, let it cool for about 5 minutes, then serve warm. Enjoy with your favorite toppings!

Notes

Substitutions: You can swap the chicken for halal beef or turkey, or go vegetarian by using extra beans or lentils. Spice it up with jalapeños or chili powder for an extra kick! For a crunchier texture, add crushed tortilla chips before the final bake. The casserole stores well in the fridge for 3-4 days or can be frozen for up to 3 months.
