Crust and Topping
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats Adds texture
Filling
  • 2 cups cherry pie filling Feel free to add more if you love cherries!
  • 1/2 teaspoon almond extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Grease a 9x9-inch baking dish or line it with parchment paper.
  3. In a large mixing bowl, combine flour, sugar, softened butter, baking powder, vanilla extract, and salt. Mix until the mixture resembles coarse crumbs.
  4. Gently fold in the rolled oats into the mixture.
  5. Set aside about 1 cup of the crumb mixture for the topping.
  6. Press the remaining mixture into the bottom of the prepared baking dish.
  7. Pour the cherry pie filling evenly over the crust.
  8. Sprinkle the reserved crumb mixture over the cherry filling.
Baking
  1. Bake for 30-35 minutes, or until the top is lightly golden brown.
  2. Allow the bars to cool in the baking dish before lifting them out.
  3. Cut into squares and serve.

Notes

For variations, try using different fruit fillings like blueberry or raspberry. Be careful not to overmix the dough, and allow bars to cool completely before cutting. Store in an airtight container for up to 3 days or refrigerate for up to a week; freeze for up to three months.
