Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium-high heat, add the ground beef (or your chosen alternative) and cook until browned, breaking it apart with a spatula (approximately 5-7 minutes). Drain excess fat if necessary.
- Stir in the taco seasoning and cook as per the packet instructions, typically a couple of minutes. Add the black beans and corn, and mix well.
- In a baking dish, spread a layer of tortilla chips, followed by half of the beef mixture, half of the salsa, and half of the cheddar cheese. Repeat these layers until all ingredients are used up, ending with the cheese on top.
- Place the dish in the oven and bake for about 25-30 minutes or until the cheese is bubbling and golden.
- Once out of the oven, let it cool for a few minutes. Drizzle sour cream on top, followed by diced tomatoes and a sprinkle of green onions.
- Cut into squares and serve while hot!
Notes
For a healthier twist, swap ground beef for lean chicken or turkey. Ensure you drain canned vegetables thoroughly to avoid excess moisture, which can lead to a soggy casserole. Leftovers can be stored in an airtight container for up to 3-4 days or frozen for up to 2 months.
