Ingredients
  

Dough and Base
  • 1 pound Pizza Dough (store-bought or homemade)
  • 2 cups Shredded Mozzarella Cheese Can mix with other cheese if desired.
  • 1 cup Pizza Sauce For filling the pockets.
Fillings
  • 1 cup Pepperoni Slices Or any of your favorite toppings.
  • 1 cup Vegetables (optional - bell peppers, onions, mushrooms, etc.) Feel free to mix and match.
For Brushing
  • 2 tablespoons Olive Oil For brushing on top of the pockets.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a floured surface, roll out the pizza dough into a rectangle, about ¼ inch thick.
  3. Using a sharp knife or pizza cutter, slice the dough into squares (around 4x4 inches).
  4. Place a tablespoon of pizza sauce in the center of each square. Top with a sprinkle of mozzarella cheese, your choice of toppings, and another sprinkle of cheese on top.
  5. Fold the dough over to create a triangle shape and press the edges together to seal. Use a fork to crimp the edges for extra security.
  6. Brush the tops of the pizza pockets with olive oil.
Baking
  1. Place the pizza pockets on a baking sheet lined with parchment paper.
  2. Bake for about 12-15 minutes or until they are golden and crispy.
  3. Allow them to cool slightly before serving. Enjoy with extra pizza sauce on the side for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. To reheat, pop them in a preheated oven at 350°F (177°C) for about 10 minutes. For longer storage, freeze individually wrapped for up to 2 months.
