Preparation
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the pizza dough into a rectangle, about ¼ inch thick.
- Using a sharp knife or pizza cutter, slice the dough into squares (around 4x4 inches).
- Place a tablespoon of pizza sauce in the center of each square. Top with a sprinkle of mozzarella cheese, your choice of toppings, and another sprinkle of cheese on top.
- Fold the dough over to create a triangle shape and press the edges together to seal. Use a fork to crimp the edges for extra security.
- Brush the tops of the pizza pockets with olive oil.
Baking
- Place the pizza pockets on a baking sheet lined with parchment paper.
- Bake for about 12-15 minutes or until they are golden and crispy.
- Allow them to cool slightly before serving. Enjoy with extra pizza sauce on the side for dipping.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days. To reheat, pop them in a preheated oven at 350°F (177°C) for about 10 minutes. For longer storage, freeze individually wrapped for up to 2 months.
