Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar until it becomes fluffy.
  3. Beat in the eggs one at a time, adding the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt (and cinnamon if desired).
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the diced peaches until evenly distributed throughout the batter.
Baking
  1. Pour the batter into the prepared baking dish and spread evenly.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for a few minutes before slicing and serving.
