  • 1/2 cup white sugar
  • 2 tablespoons cornstarch
  • 6 cups fresh blackberries Use fresh berries for best flavor.
For the topping mixture
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup unsalted butter Use brown butter for depth of flavor.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3/4 cup milk

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the white sugar and cornstarch together. Add the fresh blackberries and gently toss to coat.
  3. In another bowl, combine the flour, brown sugar, rolled oats, baking powder, salt, and cinnamon. Pour in the melted brown butter and milk, stirring until just combined.
Assembly and Baking
  1. Pour the blackberry mixture into a greased baking dish.
  2. Dollop the topping batter over the blackberries.
  3. Bake for about 30-35 minutes, or until the top is golden brown and the blackberries are bubbly.
  4. Allow to cool slightly before serving. Best enjoyed warm, perhaps with vanilla ice cream.
