Ingredients
  

Main Ingredients
  • 1 cup cooked rice Use short-grain rice for best results.
  • 1/2 pound ground beef Can substitute with ground turkey or chicken.
  • 1 carrot, julienned
  • 1 zucchini, julienned
  • 1 cup spinach, blanched
  • 1 egg Fried sunny-side up.
  • 2 tablespoons gochujang (Korean chili paste) Adjust to taste.
  • 1 tablespoon sesame oil
  • Soy sauce to taste For seasoning the beef.
  • Sesame seeds for garnish

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. Julienne the carrot and zucchini, and blanch the spinach in boiling water for about a minute.
Cooking
  1. In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart, about 5 minutes. Add soy sauce to taste.
  2. In a separate pan, heat a little oil and sauté the julienned carrot and zucchini until vibrant and tender-crisp, about 3-5 minutes.
  3. In the same or a different pan, add a touch of oil, and fry an egg sunny-side up (or to your liking).
Assembly
  1. In a bowl, layer your cooked rice at the bottom, followed by the beef, sautéed veggies, and spinach. Top it off with the fried egg, a drizzle of sesame oil, and gochujang.
Serving
  1. Garnish with sesame seeds and mix everything together before enjoying.

Notes

For a vegan option, replace ground beef with mushrooms or tofu, and skip the egg. Prep ingredients ahead of time to streamline cooking. Avoid overcooking vegetables for maximum crunch.
