Preparation
- Cook the rice according to package instructions.
- Julienne the carrot and zucchini, and blanch the spinach in boiling water for about a minute.
Cooking
- In a skillet over medium heat, add the ground beef and cook until browned, breaking it apart, about 5 minutes. Add soy sauce to taste.
- In a separate pan, heat a little oil and sauté the julienned carrot and zucchini until vibrant and tender-crisp, about 3-5 minutes.
- In the same or a different pan, add a touch of oil, and fry an egg sunny-side up (or to your liking).
Assembly
- In a bowl, layer your cooked rice at the bottom, followed by the beef, sautéed veggies, and spinach. Top it off with the fried egg, a drizzle of sesame oil, and gochujang.
Serving
- Garnish with sesame seeds and mix everything together before enjoying.
Notes
For a vegan option, replace ground beef with mushrooms or tofu, and skip the egg. Prep ingredients ahead of time to streamline cooking. Avoid overcooking vegetables for maximum crunch.
