  • 2 cups cooked rice (white or brown, your choice)
  • 1 pound ground beef (Halal-certified)
  • 1 cup spinach, sautéed
  • 1 medium carrot, julienned
  • 1 medium zucchini, julienned
  • 1 large egg
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • to taste Gochujang (Korean chili paste)
  • for garnish Sesame seeds

Method
 

Preparation
  1. Cook your rice according to package instructions until fluffy. Set aside.
  2. In a large skillet, over medium heat, cook the ground beef until it’s browned and fully cooked, breaking it up with a spatula (about 6-8 minutes). Drain any excess fat if necessary.
  3. Once cooked, add soy sauce and sesame oil to the beef. Stir to combine and let it simmer for another minute to infuse the flavors.
  4. In a separate pan, lightly sauté the julienned carrot and zucchini over medium heat until just tender (about 3-4 minutes). Add the spinach and cook until wilted (about 1-2 minutes).
  5. In the same pan (or a different one), fry the egg sunny-side-up or as desired.
  6. In your serving bowl, add a generous scoop of cooked rice. Top it with the beef, sautéed vegetables, and the fried egg. Drizzle some Gochujang over the top to taste, and sprinkle with sesame seeds.
  7. Mix everything together before eating to experience the delightful burst of flavor in every bite!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave for about 2 minutes or in a skillet over medium heat for best results.
