Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes if desired, then cut them into bite-sized cubes.
  3. Drizzle the sweet potato cubes with olive oil, and season with salt and pepper. Toss to coat evenly.
Cooking
  1. Spread the sweet potato cubes onto a baking sheet and roast in the oven for about 25 minutes, or until they are golden brown and easily pierced with a fork.
  2. Meanwhile, season the chicken breasts with salt and pepper. In a pan over medium heat, cook the chicken for about 6-7 minutes on each side, or until cooked through.
  3. Pour BBQ sauce over the cooked chicken in the pan and allow it to simmer for an additional 5 minutes.
Assembly
  1. In a bowl, layer the roasted sweet potatoes and sliced BBQ chicken.
  2. Top with any additional ingredients like corn, black beans, avocado, or chopped cilantro.
