Preparation
- Preheat your oven to 425°F (220°C).
- Wash and slice the zucchini into sticks about 1/4 to 1/2 inches wide.
- In one bowl, whisk together the eggs. In another bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
- Dip each zucchini stick into the egg mixture, allowing excess to drip off, then roll it in the breadcrumb mixture, ensuring it's nicely coated.
Baking
- Arrange the coated zucchini sticks on a baking sheet lined with parchment paper, ensuring space between them for optimal crispiness.
- Bake for about 20-25 minutes, flipping halfway through, until golden brown.
Serving
- Remove from the oven and let them cool slightly. Serve with your choice of dips like yogurt sauce, marinara, or tahini sauce.
Notes
Feel free to add spices like chili powder or paprika to the breadcrumb mixture for a kick. If zucchini isn't available, use eggplant or bell peppers, adjusting baking time as necessary. For extra crunch, try using an air fryer or broiling for the last few minutes of baking.
