Preparation
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly under cold water, scrubbing away any dirt. Pat them dry with a towel.
- Use a fork to prick the sweet potatoes about 6-8 times. This helps steam escape while baking. Rub olive oil all over each sweet potato, then sprinkle them with salt and pepper.
Baking
- Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for about 40-45 minutes, or until a fork easily pierces through the flesh.
Serving
- Once done, remove the sweet potatoes from the oven and let them cool for a few minutes. Slice open, fluff the inside with a fork, and add your favorite toppings.
Notes
Store cooled sweet potatoes in an airtight container in the fridge for 4-5 days. To reheat, bake at 350°F (175°C) for 15-20 minutes or microwave for 2-3 minutes. Choose sweet potatoes of similar size for even cooking, and feel free to experiment with toppings.
