Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under cold water, scrubbing away any dirt. Pat them dry with a towel.
  3. Use a fork to prick the sweet potatoes about 6-8 times. This helps steam escape while baking. Rub olive oil all over each sweet potato, then sprinkle them with salt and pepper.
Baking
  1. Place the sweet potatoes directly on the oven rack or on a lined baking sheet. Bake for about 40-45 minutes, or until a fork easily pierces through the flesh.
Serving
  1. Once done, remove the sweet potatoes from the oven and let them cool for a few minutes. Slice open, fluff the inside with a fork, and add your favorite toppings.

Notes

Store cooled sweet potatoes in an airtight container in the fridge for 4-5 days. To reheat, bake at 350°F (175°C) for 15-20 minutes or microwave for 2-3 minutes. Choose sweet potatoes of similar size for even cooking, and feel free to experiment with toppings.
