  • 1 cup all-purpose flour
  • 1 cup milk Room temperature is best.
  • 6 large eggs Room temperature is best.
  • 1/4 cup unsalted butter, melted Plus additional for greasing the baking dish.
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • a pinch salt
Optional Toppings
  • fresh fruit Choices can include berries or sliced bananas.
  • powdered sugar
  • syrup Maple syrup works great.
  • lemon juice For a zesty touch.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl or blender, combine the flour, milk, eggs, melted butter, sugar, vanilla extract, and salt. Blend until smooth or whisk until well combined.
  3. Pour about 2 tablespoons of melted butter into a 9x13 inch baking dish and tilt to coat evenly.
  4. Pour the batter into the prepared dish, allowing the butter to float on the edges.
Baking
  1. Bake for 20-25 minutes, or until the pancake is puffed and golden brown, avoiding opening the oven door during the first 15 minutes.
Serving
  1. Let it sit for a few minutes after removing from the oven, then slice and serve with your favorite toppings.

Notes

Use room temperature ingredients for a fluffier pancake. Avoid overmixing the batter, and do not open the oven door while baking.
