Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with cooking spray or butter.
- In a large bowl, combine the applesauce, vegetable oil, sugar, vanilla extract, and eggs. Mix thoroughly until well blended.
- In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add this mix to the wet mixture, stirring gently until just combined; be careful not to overmix.
- If desired, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan, spreading it evenly.
Baking
- Place in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
- Allow it to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely before slicing.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze in a single layer, then transfer to a freezer bag.
