Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup apple cider Use fresh apple cider for the best flavor.
  • 1/2 cup honey
  • 1/4 cup vegetable oil
  • 1 large egg
Add-ins (optional)
  • 1 cup diced apples Optional for added texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it generously.
  2. In a large bowl, combine the flour, baking powder, cinnamon, and salt. Whisk until well mixed.
  3. In another bowl, combine the apple cider, honey, vegetable oil, and egg. Whisk until well blended.
  4. Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined, taking care not to over-mix. If using diced apples, fold them in at this point.
  5. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
  1. Place the tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack.
  3. Enjoy warm or at room temperature!

Notes

For the best flavor, use fresh ingredients. Feel free to experiment with spices like nutmeg or allspice for an extra kick.
