Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it generously.
- In a large bowl, combine the flour, baking powder, cinnamon, and salt. Whisk until well mixed.
- In another bowl, combine the apple cider, honey, vegetable oil, and egg. Whisk until well blended.
- Gradually add the wet ingredients to the dry ingredients. Stir gently until just combined, taking care not to over-mix. If using diced apples, fold them in at this point.
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
Baking
- Place the tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring them to a wire rack.
- Enjoy warm or at room temperature!

For the best flavor, use fresh ingredients. Feel free to experiment with spices like nutmeg or allspice for an extra kick.
