- Start with 1 cup of cooked lentils. If using dry lentils, cook them according to package instructions until tender, then drain and set aside to cool.
- In a large mixing bowl, combine the cooked lentils, breadcrumbs, finely chopped onion, grated carrot, minced garlic, cumin, salt, and pepper. Mix until just combined.
- Using your hands, shape the mixture into burger-sized patties. You should be able to make about 4 to 6 burgers.
- In a skillet, heat a couple of tablespoons of olive oil over medium heat until shimmering.
- Once the oil is hot, gently place the lentil patties in the skillet. Cook each side for 4-5 minutes, or until golden brown. Flip carefully to avoid breaking them.
- Remove burgers from the pan and let them drain on paper towels before assembling with your favorite toppings. Enjoy!
Notes
Consider toppings like avocado slices, spicy mayo, lettuce, or creamy hummus. For storage, refrigerate in an airtight container for up to 3 days, or freeze individually wrapped for up to a month. Reheat in a skillet or microwave.
