  • 1 cup cooked lentils (black, green, or brown) Make sure lentils are tender but not mushy.
  • ½ cup breadcrumbs (or gluten-free alternative)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil For sautéing.
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the lentils according to package instructions until they’re tender but not mushy. Drain any excess water and set aside to cool.
  2. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, cooking until they are fragrant and the onion is translucent.
  3. In a large mixing bowl, combine the cooked lentils, sautéed onion, and garlic. Add the breadcrumbs, salt, and pepper, then mix until combined. For a smoother texture, mash some of the lentils.
  4. With clean hands, form the mixture into burger patties, roughly 4-6 depending on the size you prefer.
  5. In the same skillet, heat a little more oil over medium-high heat. Cook the patties for about 4-5 minutes on each side or until golden brown and crispy.
  6. Serve your lentil burgers with your choice of toppings and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. You can also freeze uncooked patties for up to 3 months.
