Preparation
- Start by boiling a pot of water. Add the sweet potato noodles and cook for about 7-8 minutes until tender yet chewy. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a separate large pan, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic, and sauté for about 30 seconds until fragrant.
Cooking
- Add the julienned carrots and sliced bell peppers into the pan, cooking for about 3-4 minutes until they begin to soften.
- Toss in the sliced mushrooms and fresh spinach, continuing to cook until the mushrooms are tender and the spinach has wilted down.
- Add the cooked noodles to the pan and drizzle with soy sauce and remaining sesame oil. Add sugar and toss everything thoroughly to combine, cooking for an additional 2 minutes.

Notes
You can swap out any veggies with whatever you have at home! Store leftovers in an airtight container for 3-4 days. Reheat in a pan with a splash of water or microwave for 1-2 minutes.
