Ingredients

  • 8 oz sweet potato noodles
  • 1 medium carrot, julienned
  • 1 piece bell pepper, thinly sliced (any color)
  • 2 cups fresh spinach
  • 4 oz mushrooms, sliced (shiitake or button)
Sauce and Garnish
  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1 tsp sugar
  • 2 tbsp sesame seeds for garnish

Method
 

Preparation
  1. Start by boiling a pot of water. Add the sweet potato noodles and cook for about 7-8 minutes until tender yet chewy. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a separate large pan, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic, and sauté for about 30 seconds until fragrant.
Cooking
  1. Add the julienned carrots and sliced bell peppers into the pan, cooking for about 3-4 minutes until they begin to soften.
  2. Toss in the sliced mushrooms and fresh spinach, continuing to cook until the mushrooms are tender and the spinach has wilted down.
  3. Add the cooked noodles to the pan and drizzle with soy sauce and remaining sesame oil. Add sugar and toss everything thoroughly to combine, cooking for an additional 2 minutes.

Notes

You can swap out any veggies with whatever you have at home! Store leftovers in an airtight container for 3-4 days. Reheat in a pan with a splash of water or microwave for 1-2 minutes.
