  • 1 pound fresh spinach about 450 grams, rinsed and stems trimmed
  • 2 tablespoons sesame oil for flavor
  • 1 teaspoon salt adjust to taste
  • 2 cloves garlic finely minced
  • 1 tablespoon sesame seeds toasted for extra flavor

Preparation
  1. Bring a pot of water to a rolling boil and add the fresh spinach leaves. Blanch them for about 30 seconds until they’re bright green and wilted.
  2. Immediately transfer the spinach to a bowl of ice water to halt the cooking process. This will keep the vibrant color intact! Drain well and squeeze out excess moisture.
  3. In a large mixing bowl, combine the sesame oil, minced garlic, and salt. Whisk them together until well combined.
  4. Add the drained spinach to the bowl and toss it thoroughly in the mixture until every leaf is beautifully coated.
  5. Sprinkle with toasted sesame seeds for that nutty crunch.

Notes

If you don’t have sesame oil, a mild olive oil could work. Consider adding a splash of lemon juice for a zesty twist. Store leftovers in an airtight container in the refrigerator for up to three days.
