- Bring a pot of water to a rolling boil and add the fresh spinach leaves. Blanch them for about 30 seconds until they’re bright green and wilted.
- Immediately transfer the spinach to a bowl of ice water to halt the cooking process. This will keep the vibrant color intact! Drain well and squeeze out excess moisture.
- In a large mixing bowl, combine the sesame oil, minced garlic, and salt. Whisk them together until well combined.
- Add the drained spinach to the bowl and toss it thoroughly in the mixture until every leaf is beautifully coated.
- Sprinkle with toasted sesame seeds for that nutty crunch.
Notes
If you don’t have sesame oil, a mild olive oil could work. Consider adding a splash of lemon juice for a zesty twist. Store leftovers in an airtight container in the refrigerator for up to three days.
