Ingredients
  

For the crust
  • 1 cup graham cracker crumbs Ensure they are finely crushed.
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted To bind the crust.
For the filling
  • 2 packages (8 oz) cream cheese, softened Make sure it's at room temperature.
  • 1 cup dulce de leche For sweetness and creaminess.
  • 1/2 cup sugar
  • 3 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until it resembles wet sand.
  3. Press the mixture firmly into the bottom of a greased 9×9-inch baking dish and bake for 10 minutes. Allow to cool slightly.
Making the filling
  1. In a large bowl, beat the softened cream cheese until smooth.
  2. Gradually add 1 cup dulce de leche and 1/2 cup sugar, mixing until well combined.
  3. Add the eggs one at a time, followed by the vanilla extract, and beat until fully incorporated.
Combining and baking
  1. Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula.
  2. Bake for about 40-45 minutes, or until the filling is set but still slightly jiggly in the center.
Chilling and serving
  1. Allow the bars to cool at room temperature, then refrigerate for at least 3 hours before slicing.
  2. Once chilled, cut into squares, drizzle with more dulce de leche, and enjoy!

Notes

Use room temperature ingredients for easy blending. Avoid overmixing the batter when adding eggs. Experiment with toppings such as crushed nuts, chocolate shavings, or fresh berries.
