Ingredients
  

For the Chicken
  • 500 g chicken breast, cut into bite-sized pieces Boneless chicken thighs can be used for extra juiciness.
  • 2 tablespoons soy sauce
  • 2 tablespoons cornflour (cornstarch)
  • 2 tablespoons vegetable oil For frying
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
For the Veggies and Sauce
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2-3 green chilies, chopped Adjust for spice level.
  • 2 tablespoons chili sauce
  • 1 tablespoon vinegar
  • Salt, to taste
  • Spring onions for garnish

Method
 

Preparation
  1. In a bowl, combine the chicken pieces with soy sauce and let it marinate for about 15 minutes.
  2. After marinating, sprinkle cornflour over the chicken pieces and mix well, ensuring that every piece is coated evenly.
Cooking
  1. In a large skillet or wok, heat vegetable oil over medium-high heat.
  2. Once the oil is hot, carefully add the coated chicken pieces. Fry for about 5-7 minutes or until they are golden brown and crispy. Remove and set aside.
  3. In the same pan, add sliced onions, bell pepper, and green chilies. Stir-fry for 3-4 minutes until the vegetables are tender but still vibrant.
  4. Toss in the minced garlic and ginger, stirring for another minute until fragrant.
  5. Return the crispy chicken to the pan, add chili sauce, vinegar, and salt to taste. Mix well until everything is evenly coated.
  6. Garnish with finely chopped spring onions and serve immediately with steamed rice or your favorite flatbread.

Notes

Adjust the quantity of green chilies and chili sauce to control the heat. Ensure your oil is hot before adding the chicken for a crispy texture. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month.
