Ingredients
  

Wet Ingredients
  • 1 cup grated zucchini, squeezed to remove excess water
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Mix-ins
  • 1 cup chocolate chips Use semi-sweet, dark, or milk chocolate chips.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper.
  3. In a large mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, and eggs. Add vanilla extract and mix until well combined.
  4. Grate the zucchini and squeeze it in a clean kitchen towel to remove excess moisture before adding it to the wet ingredients.
  5. In a separate bowl, whisk together all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
  6. Gently fold the dry mixture into the wet ingredients, being careful not to overmix.
  7. Fold in the chocolate chips to the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  2. Let the baked bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

Top with extra chocolate chips or a light glaze for enhanced flavor. Remove excess moisture from zucchini for best texture. Store in an airtight container for up to 3 days, or refrigerate for a week. Can freeze for up to 3 months.
