Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x5-inch loaf pan with non-stick spray or line it with parchment paper.
- In a large mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, and eggs. Add vanilla extract and mix until well combined.
- Grate the zucchini and squeeze it in a clean kitchen towel to remove excess moisture before adding it to the wet ingredients.
- In a separate bowl, whisk together all-purpose flour, cocoa powder, baking soda, baking powder, and salt.
- Gently fold the dry mixture into the wet ingredients, being careful not to overmix.
- Fold in the chocolate chips to the batter.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Baking
- Bake in the preheated oven for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the baked bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
Notes
Top with extra chocolate chips or a light glaze for enhanced flavor. Remove excess moisture from zucchini for best texture. Store in an airtight container for up to 3 days, or refrigerate for a week. Can freeze for up to 3 months.
