Preparation
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with oil.
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- In a separate bowl, mix the espresso, vegetable oil, eggs, and vanilla extract until well combined.
- Gradually pour the wet mixture into the dry mixture, stirring gently without overmixing.
- Gently fold in the chocolate chips.
- Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for approximately 20-25 minutes, or until a toothpick comes out clean.
- Remove from the oven and let the muffins cool in the tin for about 10 minutes before transferring to a wire rack.
Notes
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free baking flour mix. Store leftovers in an airtight container for up to three days or freeze for up to three months.
