Doritos Casserole with Chicken

  • 2 cups cooked chicken, shredded You can use rotisserie chicken for ultimate convenience.
  • 1 can (10.5 oz) cream of chicken soup Adds that creamy richness we love.
  • 1 cup sour cream Enhances the texture and flavor.
  • 1 cup shredded cheddar cheese Because who doesn’t love cheese?
  • 1 bag (9-10 oz) Nacho Cheese Doritos The star of the show!
  • 1 cup diced tomato For a splash of color and freshness.
  • 1 tablespoon taco seasoning To spice things up.
  • to taste chopped green onions or cilantro Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine cooked chicken, cream of chicken soup, sour cream, taco seasoning, and half of the shredded cheese. Stir until well blended.
  3. In a greased baking dish, sprinkle a layer of crushed Doritos (around 1/3 of the bag). Spoon half of the chicken mixture over the chips and spread evenly.
  4. Sprinkle another layer of crushed Doritos on top of the chicken mixture.
  5. Spread the remaining chicken mixture over the second layer of Doritos and then finish with the remaining shredded cheese.
Baking
  1. Place the casserole in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown.
  2. Once baked, allow to cool for a few minutes and garnish with chopped green onions or cilantro before serving.

Notes

This casserole stores well in the refrigerator for up to 3-4 days. To reheat, place it in the oven at 350°F until heated through.
