Ingredients

For the Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk
For the Gravy
  • 1 pound breakfast sausage (Halal-friendly)
  • 1/4 cup all-purpose flour (for gravy)
  • 2 cups milk
  • to taste salt and pepper

Method

Preparation
  1. Preheat the oven to 450°F (230°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the cold butter and mix until crumbly.
  3. Pour in the buttermilk and stir until a soft dough forms.
  4. Turn the dough onto a floured surface and knead gently. Pat the dough to about 1-inch thick and cut out biscuits using a round cutter. Place them on a baking sheet.
Baking
  1. Bake for 12-15 minutes until golden brown.
  2. While the biscuits are baking, heat a skillet over medium heat. Cook the sausage until browned and crumbled.
Making the Gravy
  1. Sprinkle 1/4 cup of flour over the sausage and cook for another minute.
  2. Gradually whisk in the milk and cook, stirring constantly until the gravy thickens. Season with salt and pepper.
Serving
  1. Split open the biscuits and serve them generously topped with the gravy.

Notes

Substitutions: For Halal-friendly sausage, many brands cater specifically to dietary needs. Don't rush the dough; overworking can lead to tough biscuits. For gravy consistency, whisk in more milk if necessary.
