  • 1 tablespoon olive oil
  • 1/2 cup yellow onion chopped
  • 1 7 oz package Maple Pork Sausage Links, chopped
  • 1/2 cup dry white wine
  • 1 7 oz can chopped green chile peppers
  • 1 tablespoon agave nectar or sugar
  • 2 tablespoons red bell pepper chopped
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon celery salt
  • 1/2 teaspoon ground coriander
  • 6 cups cooked rice white or brown
  • 1/2 cup scallions chopped
  • 1/2 cup fresh cilantro chopped
  • 2 tablespoons fresh lime juice
  • Salt and pepper to taste

Method
 

  1. Heat the Oil: In a medium sauté pan, heat the olive oil over medium heat.
  2. Sauté the Onion and Sausage: Add the chopped yellow onion and sausage to the pan. Cook until the onions are soft and translucent, stirring occasionally.
