  • 1 cup long-grain rice
  • 1/2 cup diced bell pepper (any color)
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (adjust to taste)
  • 2 cups beef broth

  1. In a large skillet, heat a splash of olive oil over medium-high heat.
  2. Once hot, add the diced onion, bell pepper, and celery. Sauté for about 3-4 minutes until softened.
  3. Add the ground beef to the skillet, breaking it up with a spatula as it cooks. Brown it thoroughly for about 5-7 minutes, seasoning with salt, pepper, and Cajun seasoning.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the rice to the skillet, mixing everything well. Pour in the beef broth, bringing it to a simmer.
  6. Cover the skillet and reduce the heat to low. Let it cook for about 20 minutes or until the rice is tender and has absorbed the broth.
  7. Fluff the rice with a fork and serve hot.

Notes

Serve with a fresh salad, cornbread, or coleslaw for a full meal. Adjust the spice level according to your preference.
